Practices

Our animals are raised entirely on grass/clover pasture and hay, which we grow and harvest ourselves. We do not apply herbicides or pesticides on our fields. The sheep have free access to salt and mineral but never receive any grain. We do not use antibiotics. We treat the sheep with wormer/parisitide periodically in the summer only as needed, and never treat animals fewer than 2 months prior to butchering.

The animals are allowed free range on the pastures all year though they always have access to shelter. The only time of confinement is during the 1 month breeding season in winter - breeding ewes and rams only.


Butchering

We raise 100% Icelandic sheep, known for the mild flavor of their meat. We butcher our ram lambs at 13 to 15 months of age beginning in early summer after a month of grazing on new grass. We butcher our ewe lambs at 20 to 21 months of age, in midwinter. We have found that butchering the animals at this somewhat older than average age for lambs results in meat that has a deep red color and more complex flavor than animals that are butchered younger. With Icelandics these ages do not result in a strong or gamey flavor, nor is the meat tough.


Lambs are butchered at Bri's Processing in Colfax and Mike's Starr Market in Eau Claire both Wisconsin Dept. of Agriculture inspected plants.
